Valentine's 2013

Yesterday was Valentine's Day.  For many, it's just another day.  I used to be one those people.  I never understood why we should take one day out of the entire year to tell someone we love them.  My husband and I share our love for each other ever day.  So for us Valentine's Day might seem unnecessary.  However, since I had children I decided I wanted to make a big deal out of every holiday and that included Valentine's Day.  This is a holiday to celebrate the ones you love ... so why not?

The day started with heart-shaped pancakes which has become our tradition.

Then  gifts were presented.

My children received their own stuffed animal and small box of chocolates among other gifts.  I also gave my husband some chocolates as well.

Here was the biggest surprise of the day!  After my husband left for work I found a gift bag in our bedroom.  Oh that sneaky man!  I wasn't expecting anything from him and he didn't even give a clue that he bought something for me.  In the bag was a card, with sweet words that literally brought tears to my eyes.  He gave me Jillian Michaels' new book Slim For Life.  I had heard about this book just a few days ago and mentioned I wanted to read it.  There was also a bag of chocolates.  Oh how I love chocolate!  The gifts actually gave me a chuckle ... a weight loss book AND a bag of unhealthy chocolates.  Too funny, but I love it!

I look forward to reading the book and I will definitely give a review on here.

Our three year old friend who lives across the street spent part of the day with us while her mother went to work.  My kids were happy to have someone to play with.  Unfortunately with all the chaos I didn't take a moment to figure out what to make for dinner.  I felt bad about that.  My husband decided to bring home a steak that he grilled.  We ate by candlelight.  It should have been a nice meal but Matthew suddenly felt ill.  He spent dinner time laying on the couch with a slight fever.  We had a bad parenting moment where we allowed him to skip dinner and go right to dessert.  The poor kid didn't even want to finish his ice cream.  I thought the cold dessert could help kick the fever.  Well, I later sent him to bed with fever reducing medicine and hopes that he would wake up feeling better.

Valentine's Day had it's ups and downs.  Better planning and hopefully healthier children will happen next year.

Chicken Ranch Pasta ... oh delicious!

I have never been much for cooking.  I do enjoy being in the kitchen and preparing meals but I'm not very good at it.  Unless I have a recipe in front of me I have trouble throwing things together and coming up with a decent meal.  My husband is great when it comes to cooking.  I wish to do better.  That is why I'm so glad I joined Pinterest.  It has been a way for me to find ideas for crafting with the kids, how to decorate my house, and certainly it's helped me find many different recipes.  Last night, for the second time since finding the "pin," I made chicken ranch pasta.  Sure, it's not the healthiest meal but it is delicious.  My husband and both the kids didn't have any problem devouring every bite.

I didn't take a picture from my own creation but here is the one from the website.

I will also share the recipe.  It takes a lot of time to prepare but very easy to make and delicious to eat.

CHICKEN RANCH PASTA

8 ounces penne pasta
1 Tbsp butter
1 Tbsp flour
2 Tbsp dry ranch dressing seasoning mix
2 cups milk
1 cup shredded cheddar cheese
1/3 cup cooked chopped bacon
2 cups cooked chopped chicken

In a large pot, cook pasta according to package directions.  Drain and set aside.

In the same pot melt butter.  Add flour and stir.  Cook flour for 1 minute.  Slowly whisk in milk.  Continue cooking until sauce thickens.  Stir in the ranch dressing mix and cheese.  Stir until cheese melts.  Add chicken, bacon and pasta.  Stir to coat.

As I was mixing the milk, butter and flour it took a long time for it to thicken so my husband came up with the idea to add a little more flour.  Eventually the sauce did thicken and it came out perfect.  I do recommend this dish to anyone.  Enjoy!

I look forward to finding/making more recipes for my family and sharing it on my blog.

Hello 2013

We are 17 days into the new year.  Maybe I could add to my list of New Year's resolutions to update this blog more than once a month.

I was never much at making New Year's resolutions because, quite frankly, I knew I wouldn't keep them.  I mean, who does?  However, last year I decided to set a weight loss goal for myself and I proudly can say I reached that goal ... and then some.  I also discovered I enjoy doing something I never thought I'd love: running.  Yes that's right.  I said running.  Back in school I dreaded the days when we had to run track in gym class.  I barely made it around the track once without panting and wanting to fall over.  Now I look forward to the moment I'm able to slip away and jog around the neighborhood.  I also lift weights, do cardio and joined a Zumba class last spring.  I love Zumba.

Therefore, I can mark my 2012 New Year's Resolution as: COMPLETE!

Now for 2013 I am going to continue exercising but push myself a little harder.  I also need to work on my diet.  Eating healthier is a must if I want to get rid of this belly pooch.  All the crunches and sit ups in the world won't get rid of that flab.  I also need to get my spiritual life back on track.  Spend less time on the computer and more time with the kids - but I will blog more.

Let's make this a good year!

It's Beginning to Look A Lot Like Christmas ...

However it sure doesn't feel like we are just a few weeks away from Christmas.  The weather here in Pennsylvania the last two days has been rather nice which isn't typical for December.  I do not like having to cover myself and the kids with layers of clothing and coats just to stay warm so this weather is very much appreciated.  Unfortunately it's not going to last, is it?

Like we do every year on Black Friday we started decorating for Christmas.  Rob pulled our pre-lit artificial tree out of the attic and set it up.  I spent a lot of unnecessary time trying to fluff the branches and then wrapped the garland and beads around it.  My least favorite parts.  Matthew was impatiently waiting for his chance to start hanging the ornaments.  I tried to lay out the rules of spacing the ornaments and not putting the same color balls too close to each other but then I decided to just bite my tongue and allow my 5 year old the chance to decorate the tree his own way.  It turned out pretty nice.  I love looking at the tree that was decorated by my child.  Someday my daughter will be able to add her touch to it as well.

He's 5!

I ended my last blog with talking about how quickly my son was growing up.  He turned 5 over the weekend and that feeling of bittersweet emotion hit me harder than ever.  I know it might seem silly to some since he's still just a kid.  He's no longer a baby or a toddler.  He's a big kid.  Growing up more and more each day.  It seems that each year goes by quicker than the last.  Every year on his birthday I replay his birth story in my head longing to remember each detail.  Of course, I can't remember every detail but I'll always remember how it was the greatest and most meaningful moment of my life.  He made me a mother.  He gave my life purpose.

I am so thankful to God for giving me a son who is healthy and strong.  He's also very smart and loves to learn.  I hate to be the parent that brags but Matthew gives me so many reasons to be proud.  As of now he can't read but he can write all the letters in the alphabet and with someone's help he's able to write words and put them into sentences.  He's been writing notes to people.  He loves to draw and his pictures actually look like something instead of scribbles.  Most of all, he loves to sing and that's his favorite part about school.  They've been learning different Christmas songs for a concert they'll be performing in December so he will randomly start belting out "Have a Holly Jolly Christmas" almost perfectly.  He can also say the "Pledge" and many songs he's learned from me or at school.  Yes when he recited The Pledge of Allegiance to me that almost knocked me off my feet.  I couldn't believe it.  I can see him as being more of a performer instead of the sporty type but that may change as he gets older.  When it comes to sports he likes to follow in his dad's love of the Washington Redskins.  He has yet to play any sports but I'd love to sign him up for t-ball or soccer soon.  He's also come out of his shell recently and is getting so much better at interacting with people.

Well, you get the idea.  He's a thriving 5 year old.  One that I'm proud to call my son.

A New Season

Oh gosh, when do I have time to blog?

It's after 11pm here in the eastern side of the United States.  My two kids are tucked into bed and my sick husband is as well.  It seems he has caught a cold and after feeling miserable all day the poor guy took some night-time medicine and couldn't keep his eyes open any longer.  So here I sit, wide awake, trying to come up with something interesting to write about.

Well, we are now in a new season.  Fall.  I love fall.  As much as I enjoy the hotter temperatures I'm glad to see the cooler weather make it's appearance.  I love how the leaves change colors.  I love pumpkin picking with the family and everything pumpkin flavored (especially Pumpkin Spice cappuccino).  I love the option of wearing jeans and a t-shirt or jeans and a sweatshirt.  It truly is a magnificent season with so much to look forward to like the holiday season that's fast approaching.  It won't be long before we'll be storing my autumn decorations back into the attic and sorting through all of the Christmas stuff.  For now, I will enjoy the fall.

With this season came a big change for us.  Our oldest son, four year old Matthew, started preschool.  He only attends a total of 7.5 hours per week but it's enough to teach him so much.  At home I've worked with him on learning the alphabet, how to recognize the letters, write the letters, counting numbers, recognizing numbers and writing numbers.  He has done well with me but is doing outstanding with the teachers at school.  My husband and I are both so glad we decided to put him in preschool.  Since starting school he has learned the days of the week and the months of the year.  Yes, I somehow overlooked that one here at home.  He already knew his colors and shapes; learned that before the age of two.  Now his interest is in rhyming words.  He will often ask me things like, "Mommy, does 'Bake' and 'Cake' sound alike?"

The first day of school was a bit of a challenge for me.  I know it seems silly because he's only in preschool.  I can't imagine what my reaction will be next year when I send him on the bus for his first day of kindergarten.  Ugh.  Anyway, from the moment he put his Super Mario Brothers backpack on for the first time it was as if he instantly grew.  No longer a baby.  No longer a toddler.  A preschooler.  Where did the last four, almost five, years go?  It's bittersweet.  Throughout my entire life I've always heard adults mutter the words "They grow up fast."  Now I know exactly what that means and I keep reminding myself of that.  It won't be long before high school graduation, or possibly sending them off to college.  It won't be long before I'm watching them stand before their future spouse saying wedding vows or holding my grandchild for the first time.  So for now I'm going to enjoy this season.  It's not going to last forever.

First Birthday Fun

We recently celebrated our baby's first birthday.  It's hard to believe it has been one year since I held that tiny infant in my arms.  She is truly a blessing to us and has been a wonderful addition to our family.  Since she is the last child we plan to have it's been a very bittersweet experience for me.

We celebrated with a few family members and close friends at the house last weekend.  Little Brianna didn't know what to make of it but she did very well with being the center of attention.  The house was decorated in a 1st Birthday Princess theme and we fed our guests pizza and, of course, cake.  She wore the birthday tutu her grandparents bought her for this special occasion.  It was fun!

On her actual birthday we spoiled her with presents and a trip to the mall to get her ears pierced.  She didn't necessarily like that experience too much but she looks like such an angel with those gold hearts with a pink sapphire in the middle.  I love having a little girl!
